The Perfect Autumnal Salad, Cape Cod Chop Salad with Maple Citrus Dressing

I'm genuinely tickled to share with you my all-time favorite salad!  It's chock full of delicious sweet and salty ingredients with a to-die-for easy homemade dressing!

First, I just have to say what a gorgeous week it has been around here in small-town Kentucky.  The last several days have had no summertime humidity and the skies have been clear blue like we usually see on October days.  Every night has been down-right chilly making for a perfectly brisk morning that just beckons me to my first cup of hot coffee and my fluffiest robe.

I've enjoyed some time at home by myself today as this is one of two days out of the week that both of our children are in school.  Usually I make sure parts of these days are filled with both productivity and some leisurely quiet time that I just don't have with my bustling family around.  I need time to reflect or do what I like to do, such as practicing piano and singing, or even listening to worship music. Micheal Buble, or Kenny G on Pandora with a good book.

You know, there are times for peace and stillness and times for a joyful noise and a loved-in house with messes and chaos.  I just try my best to have a little balance of both-- if possible.  :)

It's not always possible!

As you see above, I opened some windows and my patio sliding doors to allow a nice morning breeze to come in here across our family room. It was just enough to rustle my curtains and make me feel like the seasons are really turning!  It's invigorating to feel a rush of cool air around the home, but especially when the smell of fall candles are in the air. Awww, my happy place!

I also looked through this beautiful cookbook, Seasons In the South, my Grandmother has let me borrow.  Oh my, how I wish I could make every single recipe in here!!  The words are also inspiring about each season and what to look forward to.  I just starting the fall season, so I'm anxious to read what new recipes I'll decide to give a go!  I identify with the south greatly in my cooking style and lifestyle so I'm drawn to anything like this.

This recipe on the other hand isn't Southern, but too good not to love!  It's inspired by Ina Garten's Cape Cod salad in her cookbook (my fave) Barefoot Contessa, Back to Basics.  I've just about worn the pages of this cookbook out over the past 5 years, because I've honestly loved every recipe I've made from here.  This is only "recipe" I've made for a salad, but it's worth every effort!

I put my twist on this delightful salad and that's what I'm sharing with you today! My version of Cape Cod salad.  Of course, I had to add pecans instead of just walnuts because after all, I am a Southern girl.

The salad has a delicious base of spinach and romaine and is filled with things like granny smith apple, peppered bacon (just sprinkle bacon with pepper before baking), dried cranberries, pecans, and creamy goat cheese.  I added blueberries because I had them and they're beautiful in here, and I added homemade croutons.

My husband never has gone on about a salad, except for this one!  That's why I surprised him with it today when he came home for lunch.  The salad dressing is one of our favorite parts because it's sweet and tangy, so don't leave it out!

Cape Cod salad would be a beautiful and impressive addition to your Sunday meal or just one it's own like we had today.  It pairs lovely with soup and is sure to please even the most hearty eater in your home!  Let me know what you think.

Cape Cod Chop Salad

8 oz. (about 6 slices) peppered bacon (Here is my favorite method to cook it.)
8 oz. (about 3 cups) your favorite greens, I use spinach and romaine or butter lettuce
1 large Granny Smith apple, diced
1/2 c. pecans, toasted and chopped roughly (To toast carefully heat over med-low in a skillet with stirring for 5-6 minutes)
1/3 dried cranberries
1/4 c. fresh blueberries
6 oz. goat cheese, crumbled (Ina used blue cheese)
Homemade Croutons (Chop any bread or bun and toss in a bowl with olive oil, salt, pepper, and garlic powder.  Bake in a dish on 375 F. for 12-18 minutes, stirring once.)

Maple Citrus Dressing

3 Tbsp. apple cider vinegar
1 tsp. grated orange zest
2 Tbsp. freshly squeezed orange juice (This is well worth the effort, although I've used regular orange juice before, too.)
2 1/2 tsp. Dijon mustard
2 Tbsp. pure maple syrup (If you don't have the real deal, treat yourself to it for the fall!)
1 Tbsp. green onion or chives, chopped
Sea salt
1/2 tsp. black pepper
2/3 c. extra virgin olive oil (I used about 1/2 cup instead.)

In a large bowl, put the chopped lettuce and spinach leaves, green apple, nuts, cranberries, blueberries, chopped bacon, croutons, and goat cheese.

For the dressing, whisk together the vinegar, orange zest and the next 6 ingredients in a medium bowl.  While whisking slowly add the olive oil until well incorporated.  You may have to whisk this again just before serving.

Pour most of the dressing over the salad and toss all together well.  I didn't use all the dressing, but it keeps well in a jar in the fridge for a week or so.

Let everyone help themselves or serve individually as a beautiful presentation.  You may top it with extra cheese crumbles or green onion for garnish!

One more thing.....

Here is a little peak of our view beyond the salad and table at lunch.  Our yard is like a retreat for us to admire when we eat!  All of this green shall soon be replace with colorful leaves, so you'll be seeing more of that to come.

Blessings!

Salty Toffee Cracker Candy

I'm a little busy Christmas bee around the house this week as we prepare for our annual Cookies & Cocoa Party!

I've been doing relentless list making, grocery shopping, cleaning, organizing, decorating, furniture rearranging, baking and more baking this week, but it's been a joy!!!

I'm here at home in my element with the Christmas music resounding throughout  house.

I have a play list with an mix of favorites from the croons of Micheal Buble, Bing, and Perry Como to the modern classics by Vince Gill, Amy Grant, Steven Curtis Chapman, and Mariah Carey.  These tunes are chock full of festive memories to me!!!

I just want to point out to you a few of the Christmas touches I have around the living room...

 This sweet Advent calender in the picture above is one of my favorite things!   It was given to us by my parents a few years ago for Christmas.  It has the picturesque look of a house in Rothenburg Germany, and just a peek through the "windows" makes you feel as though you're seeing into a fairytale.

I know one day our children will come to love it, too!

I'm thrilled to use this heirloom quilt as our tree skirt!  It's special to us because Mr. Cozy's late Great-Grandmother made it many years ago!  It's these homespun things that bring a sense of love of family into our home during the holiday season!

I had to take a few minutes to share with you this recipe for addicting toffee cracker candy!!!  Mom has made this during Christmas, and I literally couldn't stop eating the stuff....it was a problem! ;)

This is the easiest candy you'll ever make, and it only requires 4 ingredients!  F-o-u-r!  Friends, you're only a few minutes away from making one of the best holiday treats you've had!  A quick and easy "toffee" is poured over plain saltine crackers and sprinkled with coarsely chopped pecans to get cozy for just a few minutes in the oven.  When taken out, it becomes this slightly salty and sweet, crunchy, flaky, break apart candy that's you can munch on all season long!

 Salty Toffee Cracker Candy

4 oz. Saltine crackers, about 1 sleeve
1 c. (2 sticks) Butter
1 c. Brown Sugar
3/4 c. Pecans, coarsely chopped

Preheat oven to 400 degrees F.

Line a parchment paper covered cookie sheet with the crackers.

In a medium saucepan, combine the butter and brown sugar.  Bring to a boil and boil for 3 minutes.  Immediately pour over crackers and spread out evenly. (This mixture thickens fast!) Evenly sprinkle pecans all over.

Bake for 5-6 minutes.  Let sit for 5 minutes. Remove the parchment paper with crackers to help cool faster.  (You will be tempted to eat right away!)  Cool and break into squares.  Store in an airtight container or even better, give away as a Christmas blessing!

I actually used an additional 1/2 sleeve for the toffee mixture and 1 c. pecans.  It's so good, be prepared to make a double batch!

Back to kitchen "work" I go!...

*Best Loved* Derby Pie

Dear Ones, this pie is amazing!!!
I wrote about this recipe 3 years ago when I first started this blog, but it's well worth sharing again!  This derby pie is not only a family favorite on my hubby's side, but has become a personal favorite pie of my own!

As you may know, derby pie is a Kentucky favorite that originated in Louisville, Ky.  I've seen recipes of derby pie that seems more like a pecan pie with a custard-like texture and others with the addition of bourbon, but I still think this recipe is the best!

If you love chocolate chip cookies at all, you will go crazy over this!  It's full of pecans and chocolate chips and is a little gooey and very rich!  I used refrigerated pie crust that I fluted or "ruffled" and gave a milk bath followed by a sugar shower.  Yes, it's worth the fuss, for this pie is serious business around here!  I adopted this recipe from my mother-in-love, where we usually have it at her Thanksgiving or Christmas dinner.  I've had other's children ask me to make this for their birthday, and adults want to pay me to make this derby pie for them!  It is reeeally good!  (And it's super easy to make...ssshhh! ;)

If you want a slice of what Kentucky homes taste like at the holiday season, make this delicious pie!  Please enjoy every day of this beautiful Christmas season the Lord has given us, because I know it will slip away quickly into winter solace.  After just putting our tree up, I'm sitting by it now and taking in the moment!

*Best Loved* Derby Pie

1 c. Sugar
1/2 c. (1 stick) Butter, softened
1 Egg
1 tsp. Vanilla Extract
1/2 c. Flour
1 c. Chocolate Chips
1 c. Pecans, chopped

1 Refrigerated Pie Crust
Half & Half or Cream
1 Tbsp. Sugar

Preheat oven to 350 degrees F.

Get the crust out of the fridge and allow to set 20 minutes before using.  Unroll, arrange crust in a pie pan, and flute the edges.  Set aside.

Mix all of the pie ingredients together and pour in the pie crust.  Spread out evenly.

With a pastry brush brush the half and half or cream all around the fluted edge of the pie.  Next sprinkle sugar on top of the crust to give it a gorgeous sheen and sparkle!

Bake for 35-38 minutes.
Let cool for 30 minutes-- if you can--before slicing and serving!

Amazing Chocolate Praline Bark & Christmas Decor

I'm pretty excited to share with you with a recipe I just made last night!  It's soooo good!  Buttery like toffee, sugary like pralines and rich with chocolate....it's delicious and so easy to make!

I've made versions that are very similar to this --thanks to Shareen!-- but I just kind of winged this recipe with what I had and it turned out scrumptious!

I was trying to make something to give to my husband to take to work today for his fellow med students.  I wanted to use ingredients that I had on hand, because it was a very cold, rainy night last night and I really didn't want to get back out to the grocery. I was just fine in my snuggly home that I do not take for granted!

 I wanted to make something that I don't usually make, but something incredible!
This chocolate praline bark really fit the bill!   We were both surprised at how addicting these little things are.

I must say though, I made all of them to only eat 2 tiny pieces!  It was very bittersweet to give all of these yummies away, although I do LOVE baking for other!  Especially at Christmas-time!
It's a time for giving.

These little goodies would be perfect gifts to package up!  Simple and easy with everyday ingredients.  You can really add whatever candy you want on top, but whatever you do you must use the pecans!  We both agreed that they not only make the house smell unbelievably cozy while baking, but they really make this candy over the top!!
I hope this chocolate praline bark gives you a new idea to add to your baking-palooza  this holiday season!

(Enjoyed my fire this morning, and isn't this little gingerbread tea pot adorable!?  I love him:)

Christmas-Time Chocolate Praline Bark

 1 sleeve graham crackers

1/2 c. butter

1/4 c. brown sugar, packed well

1/8 tsp. salt

1/4 tsp. vanilla

1 c. pecans, roughly chopped

1/2 c. white chocolate chips

2 squares chocolate "bark"/candy coating, chopped

1/2 c. semi sweet chocolate chips

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Preheat oven to 350 degrees.
Cover a sheet pan with aluminum foil or parchment paper.  Spray with cooking spray.
Lay out the graham crackers right next to each other on the sheet pan.
In a saucepan, melt butter and sugar together and bring it to a boil for 2 minutes.  Take off the heat; add vanilla.
Pour mixture over the graham crackers.  Spread with spoon if you need to reach all the corners.
Sprinkle pecans evenly all over the top and bake for 10-12 minutes.
Meanwhile, melt chopped chocolate bark carefully. (I did it in the microwave).  I melted in 30 second intervals, stirring in between to avoid burning.  When bark is melted, add chocolate chips.  Stir until melted and heat a few more second in microwave if you need to.  Please remember chocolate burn easily.
(I did add a tiny smidgen of corn syrup here to give the chocolate a gloss. Optional.)
When the praline bark comes out of the oven, wait a few minutes, then sprinkle white chocolate chips all over and drizzle with melted chocolate.
Refrigerate to harden up faster.  Will only take about 30 minutes.
Break your yummy candy into shards to resemble bark.  Store tightly and enjoy!
I wanted to share with you a bit more of my Christmas decor! I decorate my home to my taste...something that's cozy-classic with a bit of whimsy!
He's my very favorite little birdie!  Gotta love the hat!
I got these stockings last year at an antique&gift shop.  I thought they were cute!
The basket is for our Christmas cards we receive.
Patti's 1880s Settlement Sawdust Pie
(Don't you want a piece??)
This incredible slice of Sawdust Pie, is from a favorite local restaurant that is known for their over-the-top seasonal decor, 2 in. pork chops, "mile high" meringue pies and I also think their sawdust pie!   This beloved eatery is Patti's 1880's Settlement in the small yet charming, lakeside town of Grand Rivers, Ky.
I've had this recipe for a few years now and every time I make it I remember just how good this pie really is!
Being filled with graham cracker crumbs, coconut and pecans with a mound of fresh whipped cream and sliced bananas, this pie is good for a decadent breakfast or delicious dessert!  I tend to think of it more in the fall, but it's warm flavors are always welcome in my tummy. :)
Patti's (as us locals call it) is known for their amazing Christmas decor!  My Grandmother and I recently went there as tradition for her birthday, and they had the Christmas up and decorated it's all it's glory!  This is just a glimpse of some of the decor over the window in just one of the many rooms. I think the theme in this room was the nativity scene.
My Grandmother and I have always been very close.  She means so much to me and I love that she wanted to spend her birthday celebration at Patti's just the two of us!
It was a day of fun!  The food (my delicious Kentucky Hot Brown with homemade potato chips and sawdust pie), the gifts, the Christmas atmosphere, all the chatting and laughing, and most importantly the company made this day one I won't forget.  I just had to share a piece of it with you!
If you live too far away to visit Patti's, then you should at least make this incredible Sawdust Pie!!!
Patti's 1880s Settlement Sawdust Pie
7 egg whites, whipped
Add
1 1/2 c. pecans
1 1/2 c. sweetened coconut
1 1/2 c. graham cracker crumbs
1 1/2 c. sugar
Did I mention this is so easy to make?
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Mix all together well.

Pour into 9 in. deep pie shell and bake at 350 degrees for 25-30 minutes.

When cool, top with whipped cream and freshly sliced bananas.  (Both are a must!)

Enjoy!
