Doesn't everyone deserve a leisurely afternoon from time to time, doing only what you want to do?
It's not a time where you're frantically scurrying around the house to pick after every body's dishes or dirty socks.
It's not a time where you're starting to wash that mountain of laundry before family arrives for the weekend.
It's not a time where you're juggling emails and a grocery list that would rival the Great Wall.
You may have forgotten just what a leisurely afternoon is.....
It is finding a moment when the house is fairly quiet (lets be reasonable) and taking a warm milk bath with instrumental music playing softly as you close your eyes and drift into your Never Never Land!
It is when you have your time to talk to the Lord. Really TALK or SING praises aloud to Him, without interruption.
It is a cloudy day and the rain is just starting to patter as the pot of your favorite coffee has finished brewing. Your best friend is coming for a visit and girl talk.
It is when you're husband is off for the day and you've popped some homemade popcorn, cuddled up together and are watching your favorite movie that brings happy memories.
It is when you can truly relax(!) in your favorite comfy pants, cozy sweatshirt, and soft socks. When you take the time to light a few warm scented candles and enjoy the tranquility of an empty-- but happy-- home.
This kind of day may not come often, or you may have the pleasure of doing all of these things in one wonderful weekend! (I call this a "staycation".)
I'm so thankful to enjoy the small things, the quiet moments, the treasure of having a safe home and loving husband. God is good.
Banana Double Chip Muffins
Makes 1 Dozen
1/2 c. Canola Oil
2 Eggs
1/2 c. Sugar
3 Mashed Bananas
1/4 tsp. Pure Vanilla Extract
1 2/3 c. All-Purpose Flour
1 tsp. Baking Soda
1/2 tsp. Baking Powder
1/4 tsp. Salt
1/4 tsp. Cinnamon
1 c. Semi-Sweet Chocolate Chips
1/2 c. Milk Chocolate Chips

Preheat your oven to 400 degrees.
Spray a muffin tin with baking spray and set aside.
In a small bowl, place one cup of the chocolate chips and couple of teaspoons of flour. Stir together and set aside.
In a large bowl, mix together the flour, soda, powder, salt and cinnamon. Stir with a whisk to sift it together and get out any clumps. Set aside.
In a bowl, mix together the oil and sugar until very blended and smooth.
Add the eggs, banana and vanilla and mix together well.
Make a well in the dry mixture, and add the wet banana mixture. Stir together until just blended.
Add the flour-coated chocolate chips and gently fold in.
Evenly divide batter into the 12 muffins cups and dot the tops with remaining 1/2 c. milk chocolate chips. This is where I use the Ghiradelli milk chocolate chips.
Bake for about 18 minutes, or until you have a clean toothpick.
Enjoy the chocolate gooey goodness!
